2 cups chopped cooked chicken.
1 can Rotell.
2 cups cooked rice.
1 can of black beans.
1 can of corn.
1 cup chicken broth.

Directions:
1. Cook the chicken I sauteed mine in a skillet with olive oil and salt and pepper.
2. Prepare the rice. I use my Instapot to make the rice, it makes it perfect every time. Use your favorite methods.
3. When the chicken is cooked add the Rotell and chicken broth let simmer for a few minutes.
4. While the chicken and rice are cooking drain the corn and black beans (I rinse the black beans) and add to the chicken mixture. Cook for about 10 minutes.
When everything has cooked add the rice to a bowl and chicken mixture on top. Enjoy!!!

Substitute smoked sausage or ham for chicken.
Add grilled bell peppers, and onions.
