1 lemon cake mix.
2 lemons medium size
¼ cup melted butter
1 cup powder sugar
- Preheat oven to 350. Zest the 2 lemons and squeeze the juice in a bowl and set aside.
- In the mixing bowl add the cake mix, eggs, butter, 2 tbsp of lemon juice and zest set the remaining zest and juice to the side. Stir together until mixed.
- Drop by spoonful’s onto a cookie sheet and bake for 10-12 minutes until lightly brown and crispy on the edges.
- Let cool on a wire rack. Mix the powder sugar, the reaming lemon juice, and zest until smooth. Drizzle over the cooled cookies. Or lightly dust with powdered sugar. Enjoy.
