Ingredients:
· 4 small to medium apples peeled and cored.
· ¼ cup water
· ¼ cup brown sugar
· 1 tbsp butter
· 1 tsp cinnamon
Filling:
· 2 8oz. packages of softened Cream Cheese
· ¼ cup chopped pecans
· ¼ cup chopped figs (freeze the figs for a few minutes before chopping it makes it easier to chop)
· 1 tsp Lemon Juice
· 1/3 cup crushed Pineapples
Directions:
1. In a skillet combine the water, brown sugar, butter, and cinnamon. If your apples are bigger add a little more water, brown sugar, and butter.
2. Stand the apples up in the skillet and cook over low heat.
3. Spoon the liquid over the apples and cook until the syrup is thickened, and apples are done.
4. While the apple are cooking start the filling.
5. In a mixing bowl add the cream cheese, and lemon juice beat with a mixer until smooth.
6. Add pineapples and beat the mixture again until it is smooth.
7. Stir in the pecan and figs.
8. Let the apples cool slightly.
9. Use a spoon to stuff the apples with the filling.
10. Return the skillet back to the burner on low and heat the apples again for about 5-7 minutes. Just enough to warm the filling and not burn the syrup.
11. Put the apples on a small plate or bowl and spoon the syrup over the top.
