Chocolate Chip Caramel Coffee Cake
Coffee cake is a moist delicious cake that is often served with coffee. It is usually made with fruit and nuts, rich with cinnamon and nutmeg and topped with streusel. Coffee cake is sometimes made with a yeast dough or a traditional cake batter, both ways are delicious.
Coffee cake has been around since the 17th century. It was originally cakes that were meant to be served along with coffee or other hot beverages. They didn’t always include coffee as a main ingredient. When coffee cake where first made it was often sweet yeast bread filled with fruit.
As coffee gained in popularity so did coffee cake recipes. With coffee houses making a comeback there are as many types of coffee cakes as there are coffees. This coffee cake is so easy and it tastes amazing! Using a box cake, a few extra ingredients add some chocolate chips and caramel chips, it’s a cake you will want it anytime of day.
Ingredients:
1 yellow cake mix.
3 eggs
1 cup strong brewed coffee (cooled)
½ cup vegetable oil
6 squares (6 oz.) of semi-sweet chocolate chopped.
1/3 cup slivered almonds.
1/4 cup semi-sweet mini chips 1/4 cup caramel bits.
Streusel topping:
2/3 cup all-purpose flour
1/2 cup packed brown
1/2 stick butter
Drizzle:
1 cup powder sugar
Add just enough and stir milk until smooth and not too thin.
Directions:
Mix the streusel topping in a bowl and set aside.
Heat Oven to 350*
Mix the cake mix, eggs, coffee, and oil until it is mixed well. Fold in the chopped chocolate and spread into a 13’ x 9” pan. Sprinkle the almonds, chocolate, and caramel chips over the top. Spread the streusel topping over the top. Bake for about 30 minutes until done in the middle and a toothpick comes out clean. Cool slightly and drizzle the powder
