Black Bean Soup
Black Bean Soup is so easy, tasty and very easy to make. Black beans are an excellent source of fiber, potassium, and protein, and are naturally fat-free, sodium-free, and cholesterol-free. Follow me and I will show you how to make black bean soup for 2 or for a crowd.
First you need to start with dry black beans a good measure is ½ cup per serving. Wash the beans and soak overnight in clean water. When you start the beans rinse well and put them into your pot. I like to cook my beans in a ceramic Dutch oven low and slow. You can always use a crock-pot or Instpot and is perfectly fine. Refer to the instruction manual for times.
Ingredients:
Black Beans ½ cup per serving.
Salt and Pepper (to taste).
½ tsp. Garlic Powder.
½ tsp. Onion Powder.
½ tsp. Cumin.
Water
Ham or other meat about ¼ cup per serving. You can leave the meat out if desired.
Chicken Broth.
Add beans to your pot and 1 cup of chicken broth for 4 servings, and 1 cup of water.
Add Ham or other meat and seasonings stir together.
Put the lid on and cook until tender. In my Dutch oven about 4 hours on low to low-medium heat. Checking throughout cooking, and add water as needed.
Top with chopped onions, Jalapenos, and sour cream. Serve with tortilla chips or cornbread.
